Since our beginning in 2018, hospitality has been at the heart of everything we do at La Cadole de Chardonnay. Today, we are pursuing our inclusive mission by offering a selection where every guest, whatever their choice, enjoys an elegant and shared tasting experience.
It is high time to shatter the stereotype that those who choose not to drink alcohol are ‘killjoys’ who should settle for a soda or a fruit juice and peanuts, sidelined from the merry crowd!
When I discuss this subject with other professionals, I too often hear: ‘I don’t have the demand.’ To which I always reply: to have the demand, you must first have the offer. I have personally felt the frustration of being stuck with iced tea or fruit juice during an excellent meal that deserved much better… and so did I!
I am passionate about wine; I love wine, but I felt the need for a break, if only to reflect on my relationship with alcohol because I want to stay in control. That is my personal reason. Whether temporary or permanent, the reasons for not drinking alcohol are personal, yet it is clear that people are too often asked to explain themselves, if not apologize for it.
At La Cadole de Chardonnay, we never judge; our role is to offer alternatives and bring people together.
That is why we have chosen to highlight ADULT beverages: creations crafted for their bitterness, structure, or length on the palate. We are not looking to imitate; we offer ultra-high-quality alternatives and create our own cocktails using products of recognized excellence. This purity is what we invite you to discover through exceptional producers.
The Moderato Cellar
The expression of grape varieties and winemaking expertise.
For our selection of dealcoholized wines, we have chosen the house of Moderato. Their cuvées, crafted from traditional grape varieties, benefit in some cases from barrel aging to provide a woody structure and a complexity found nowhere else in the alcohol-free world.
This quest for excellence is further illustrated by the recent collaboration between Moderato and Château Sigalas Rabaud (1855 Grand Cru Classé of Sauternes) to create a dealcoholized Sauternes, marking a major symbolic milestone for the future of the wine industry.
Chardonnay
A balanced and elegant structure with notes of fresh white fruits, enhanced by 4 months of aging in oak barrels, which brings a delicate toasted touch and a beautiful length on the palate.
Colombard
A crisp and lively opening, with aromas of exotic and white fruits, underlined by notes of citrus zest.
Pinot Noir
(Aged in barrels)
A subtle fruitiness and a mineral touch, carried by supple tannins and a spicy finish.
Rosé
Voted best rosé 2025. Aromas of ripe and fresh red fruits, a touch of citrus, and a refreshing finish.
Merlot-Tannat
An expressive profile of black fruits and spices (a hint of vanilla), with velvety tannins and a supple finish.
Sigalas Rabaud
An exceptional encounter with a 1er Grand Cru Classé: a complex nose of candied fruits and honey, a smooth opening and surprising freshness.
Blanc de Noirs
Fine and persistent bubbles opening with indulgent notes of candied fruits and sweet almond. A perfect balance between vivacity and smoothness.
The Art of Adult Mixology 🍸
The structure of plants and the nobility of distillates. Our cocktails are not fruit juices, but aromatic constructions using distilled bases or characterful infusions.
- Necense Organic Compositions: Far more than just infusions, these signature recipes are the pillars of our cocktails. They allow us to create Mojitos with resinous notes (Organic Canopée), Kirs with wild herbs (L'Indompté), or intense Moscow Mules thanks to the bird’s eye chili and ginger in their Ginger Beer. Their Organic Tonic and gentian-infused Spritz base provide the deep bitterness that is essential to our creations..
- Giffard Bases: Juniper, sugar cane, or smoked agave extracts that structure our recipes with a liquorist's precision.
- Haute Distillation: We use the most award-winning spirits, such as Djin AmarOz (World’s Best Alcohol-Free Spirit 2024), for its gentian and bitter orange bitterness. We have also selected Sober Spirits Rum 0.0%, voted the world's best alcohol-free rum, for its woody roundness and notes of caramelized dried fruits.
Djins Spirits

ounded on the ruins of a former family production in Saint-Brice, Charente, MAISON DÂME was created in 2016 by Master-liquorist and herbalist Romuald Vincent. The cuvées are focused on the work of botanicals through maceration, distillation, and other artisanal techniques kept secret.
MAISON DÂME brings together a selection of traditional spirits and DJIN SPIRITS, an alcohol-free range. Together, they form a family of plant-spirits, a synthesis of ancestral expertise built around medicinal plants and their powers.
Amaroz
Voted world’s best alcohol-free spirit 2024.
A distillation feat that captures the very essence of noble bitterness. Driven by notes of gentian and bitter orange, it offers exceptional length on the palate.
Ideal for: An alcohol-free Negroni or Spritz with unparalleled depth.
Djin Nature Passion N°1
Balanced Exoticism
A bold marriage between the power of botanicals and the radiance of passion fruit. Its aromatic structure is both round and lively, avoiding sugar to focus on the pure fragrance of the fruit.
Ideal for: Bringing a fruity and sunny touch to your mixology creations without ever masking the character of the plants.
Djin Nature Immunité N°2
The Quintessence of Herbalism
An artisanal creation by Maison Dâme, centered on medicinal plants. This “Djin” reveals a complex and resinous bouquet, offering a vegetal freshness reminiscent of forest walks.
Ideal for: Botanical cocktails, topped with an Organic Tonic or as a cold infusion to enhance wild herbs.

Kombucha Sobaie (Villa Noria)🍇
Nicknamed the “Winemaker’s Kombucha,” this beverage is crafted exclusively from organic grapes by this renowned Languedoc estate, regularly featured in the Guide Hachette. Without any added tea, the expression of fruit and terroir is absolute. We have selected the three expressions from the range for their natural effervescence and complexity: the Blanc for its vivacity, the Rosé for its notes of red berries, and the Rouge for its deeper structure and black fruit aromas.
The White
Crystalline vivacity and natural freshness of white grapes.

A selection of four organic beers with character. Edmond’s expertise is based on a complete mastery of the brewing art: as brewers of traditional beers (with alcohol) first and foremost, they use this expertise to preserve the body and aromas of malt and hops in their alcohol-free versions.

Beyond the diversity of flavors, an invisible link unites the partners I have chosen for this new menu. My selection is based on four non-negotiable pillars: Excellence of the finished product, a constant search for Creativity, an authentic Human relationship and, above all, a perfect knowledge of the alcoholic universe.
It is because they master the codes of fermentation, distillation, or aging that they are able to offer “adult” alternatives that are just as complex.

This new selection was born from a simple intuition: we believe you are just like us. We love wine, but we also love the idea of being able to alternate, to vary the pleasures according to the moment’s desire, without it becoming a topic of discussion or requiring justification.
It’s this freedom that we want to celebrate at La Cadole. And because inclusion is also savored on the plate, our appetizer platters of local products are now also available in vegetarian mode, so that every shared moment is complete.
Our regulars can rest assured: our passion for great terroirs remains intact. Our excellent classic wine list, rich with its Burgundian gems, continues to sit proudly in our cellar.
